as promised, here are the pictures of the candy station i created for last night's party/fundraiser. the event turned out to be a huge success and we were able to raise a lot of money towards such a good cause - thanks to everyone who came out and donated! if you're still interested in helping out - we're still taking online donations for this saturday's walk.

love me tender: braised beef short ribs with white cheddar polenta

as we all know, it was the day of loooove last weekend and i couldn't think of a better way to celebrate then to cook an elegant meal for my favorites and my bests. i went out of my comfort zone with this recipe, but it definitely paid off.  the polenta was extremely creamy but also had a nice bite to it from the white cheddar cheese.  the ribs literally feel off the bone and had a wonderful earthly flavor. and oh were they tender.

ingredients:

2 lb. bone-in beef short ribs
1/2 tablespoon fresh thyme leaves
1/2 tablespoon paprika
evoo
1/2 yellow onion, chopped
1 carrot, quartered
2 garlic cloves, minced
1/2 tablespoon flour
3/4 cup dry red wine
3/4 cups water
1 cup beef stock
3/4 tablespoon tomato paste
1 teaspoon balsamic vinegar
1 bay leaf
1/2 cup heavy cream
1 cup instant polenta
4 oz white cheddar cheese 
1 punch asparagus
s&p

directions:
put ribs in a large bowl. mix together 1 teaspoon each of s&p and 1/2 tablespoon thyme leaves and the paprika. rub the seasoning all over the ribs. cover and let stand for 2 to 4 hours.

preheat oven to 325 degrees. in a large dutch oven over medium high heat warm the evoo. working in batches add the ribs in a single layer and cook, turning as needed, until browned on all sides - about 5 minutes for each batch. transfer to bowl and set aside.

pour off all but 2 tablespoons of the fat in the pot and return to medium high heat. stir in the onion and carrots, cooking for 2 minutes. stir in the garlic and then sprinkle the vegetables with flour. cook for two more minutes, stirring constantly. pour in the wine, scraping up any browned bits clinging to the bottom of the pot, continue to stir, adding the water, beef stock, tomato paste, vinegar, bay leaf, thyme springs and more s&p. return the ribs and any collected juices to the pot and spoon the liquid over the ribs.

cover and place in the oven to cook for 1 hour. uncover stir the meat, recover, and continue to cook for about 2 more hours, until meat has nearly fallen off the bone. remove from oven and skim off and discard the fat from the surface.

meanwhile, in a saucepan, bring 3 1/4 cups water and the cream to a boil and whisk in the polenta. lower the heat to medium low and cook, whisking, until tender, about 3 minutes. stir in the cheese and season with s&p.

when ribs come out the oven, turn heat up to 400 degrees. season asparagus with evoo and s&p.  roast for about 5 to 7 minutes.  you might need a longer cooking time if you have thick asparagus - ours were the really thin ones.

as an appetizer, i served a beet, goat cheese and avocado salad. simply mix together those ingredients with any balsamic vinegar and you've got yourself an elegant and easy starter.

the holiday season is official over and sis and i can finally get back to you guys.  we've had a busy couple of weeks with an unruly snow blizzard, puppy babysitting and visitors galore.  we had to cancel peg's first annual christmas party after waking up to 20 inches of snow last saturday morning.  never one to just give up, i decided to whip up some of the appetizers i had planned to make, just in much fewer quantities.  some of the recipes can be found at the link above and the others are listed below.


crunchy chicken spring rolls

panko crusted crab cakes with spicy avocado aioli


mini beef tenderloin sandwiches with mustard-horseradish sauce

crunchy chicken spring rolls
(adapted from martha)
ingredients:
2 chicken breasts, cooked and shredded
1/4 cup diced onion
1/4 cup minced celery
1/4 cup grated carrot
3 garlic cloves, minced
1 tablespoon of fish sauce
1 tablespoon of soy sauce
1/2 cup grated cabbage
1/4 cup sugar snap peas, thinly sliced
1 tablespoon of vegetable oil, plus more for frying
20 spring roll wrappers
1 egg
1 tablespoon water
pepper

directions:
heat oil in large saucepan over medium high heat. add chicken, onion, celery, carrot, garlic, sugar snap peas, cabbage, fish sauce and soy sauce. cook for about 4 minutes and season with pepper. remove from heat and set up a work station. beat egg and water in small dish to make an egg wash. cover wonton wrappers with damp paper towels to prevent from drying out while making the spring rolls. working quickly, place about a tablespoon or more of chicken mixture in corner of wrapper. (you will need to fold this spring roll like you would fold a burrito.) roll up corner until you cannot see mixture anymore. fold up sides to meet in the middle and continue to roll into right cylinder. brush top corner with egg wash and seal. cover rolls with damp paper towel as you continue to make the others. heat oil in large skillet to 350 degrees. working in batches, fry up spring rolls for about 2 to 3 minutes, placing on paper towel to absorb left over oil. you must continually turn rolls to make sure they don't burn. serve immediately with asian duck sauce.


panko crusted crab cakes with spicy avocado aioli

ingredients:
16 oz crab meat
1.5 cups panko breadcrumbs
1/4 cup diced celery
1/2 cup mayo
2 tablespoons sour cream
1 egg
1 teaspoons dijon mustard
1 tablespoon worcestershire sauce
couple dashes of hot sauce
avocado
s&p

directions:
preheat oven to 450 degrees. combine crab, 1/2 cup panko, celery, 1/4 cup mayo, egg, dijon mustard, worcestershire sauce, hot sauce and s&p in a mixing bowl.  stir together and form into 2 inch crab cakes. place remaining panko on plate and roll each crab cake into breadcrumbs, making sure they stick.  place crab cakes on non-stick baking sheet and bake for 15 to 20 minutes.

combine 1/4 cup of mayo, sour cream, avocado, hot sauce and s&p in food processor and blend.  once crab crabs are finished, scoop a little of the avocado aioli on each.  serve immediately.

the impromptu family party was a a hit, including a round of drunken dominoes till 3 a.m. and this little pup came just in time to enjoy the holidays with us.

good things coming to cotton top

next weekend, peg is hosting her first annual cotton top christmas bash.  she has asked me to cater the party where the guest list will be anywhere from 30 to 45 people.  my heart is filled with culinary glee as i have begun to plan out the menu.  my girl ina taught me the best way to host a successful party is to make half of your food in advance and the other half right before the party.  you'll notice half of the menu can be served at room temperature or cold. here's what i have going on so far:
  1. panko crusted crab cakes with spicy avocado aioli*
  2. bacon-wrapped shrimp with basil garlic stuffing
  3. mini beef tenderloin sandwiches with mustard-horseradish sauce
  4. vegetable spring rolls with sweet dipping sauce*
  5. layered sundried tomato and basil cheese spread
  6. prosciutto crostini with lemon fennel salad
  7. peanut chicken skewers with chili mayo
  8. spiced mixed nuts*
  9. vegetable crudite platter with green goddess dressing

      giving thanks

      i wanted to give a big thank you to my friend kim and her boyfriend david for giving me the best gift of all this holiday season - 3 pound wedge of jarlsberg cheese.  david found the entire wheel mis-priced at harris teeter for only $7.  lucky for me, david is a pale and believes us pales should stick together and handed over some.

      i immediately knew that i wanted to whip up some cheese fondue with this decadent treat as a thanksgiving appetizer.  i served it with sourdough bread, broccoli, cauliflower and chunks of salami.  needless to say, there wasn't much left over to take any pictures.

      tomorrow we celebrate our nation's independence. and all of our bellies.

      i'm headed to nags head, north carolina with a few buds this weekend and i think they only invited me because they know i'll make a little something delicious for them. they use me, i tell ya. here's what i got in the works for a beachside menu complete with a very patriotic cocktail. if you prefer to plan ahead - no problem there. everything can be prepared in advance and eaten at room temperature.


      i know this might seem like a lot, but when it comes to food - my theory is...more is better. same goes with the sunscreen. here's what's on tap:

      * strawberry blueberry mojitos
      * corn salsa dip with lime chips
      * mini crab cakes with garlic aioli
      * beef teriyaki kabobs
      * honey-chipotle barbecue chicken sandwiches with creamy coleslaw





      strawberry blueberry mojitos
      ingredients for simple sugar:
      • 2 cups granulated sugar
      • 2 cups cold water

      ingredients for mojitos:
      • 2 cups fresh blueberries
      • 2 cups fresh strawberries
      • 2 limes, cut into wedges
      • 40 fresh mint leaves
      • 8 ounces simple syrup
      • 8 ounces rum – the GOOD kind (might want to add more as the night goes on)
      • 10 ounces club soda
      • ice cubes
      • blueberries and mint leaves for garnish

      directions: add sugar and cold water to a saucepan. bring it to the boil and stir until the sugar dissolves. add the blueberries, strawberries, lime wedges and fresh mint leaves to the pitcher. muddle with a wooden spoon so the blueberries and strawberries are broken and the mint and lime release their juices and flavor. add the simple syrup, rum and top off with club soda. give it a quick stir. garnish with a handful of fresh blueberries and a sprig of mint.


      corn salsa dip with lime chips
      ingredients for dip:
      • 6 ears fresh corn on the cob kernels, cooked and cut
      • 4 roma tomatoes, seeded diced
      • 1 jalapeño, finely diced
      • 2 garlic gloves, grated
      • 2 15oz can black beans, rinsed and drained
      • 1 small red onion, diced

      ingredients for chips:
      • ¼ cup of fresh squeezed lime juice
      • zest of 3 limes
      • 3 tablespoons of evoo
      • 3 tablespoons of cilantro
      • salt and pepper
      • 1/4 cup freshly squeezed lime juice
      • 2 teaspoons kosher salt
      • 10 fresh flour tortillas, cut into quarters
      • 4 tablespoons of vegetable oil

      directions: combine evoo, lime juice, lime zest, garlic, jalapeños, ands&p in bottom of serving dish. add corn, tomatoes, black beans, red onion, and cilantro to serving dish. mix together and serve. preheat oven to 350 degrees. spray baking sheet with non-stick cooking spray. cut tortillas into wedges and place on baking sheet. brush tortilla wedges lightly with oil, drizzle lime juice and sprinkle with salt. bake for 5 to 7 minutes. turn tortilla chips over and cook for an additional 5 minutes. WATCH THEM! they burn easily.


      mini crab cakes with garlic aoili
      ingredients for cakes:
      • 2 tablespoons unsalted butter
      • 2 tablespoons olive oil
      • 3/4 cup small diced red onion
      • 1 1/2 cups small diced celery (4 stalks)
      • 1/2 cup small diced red bell pepper
      • 1/2 cup small diced yellow bell pepper
      • 1/4 cup minced fresh flat-leaf parsley
      • 1 tablespoon capers, drained
      • 1/4 teaspoon tabasco
      • 1/2 teaspoon worcestershire sauce
      • 1 1/2 teaspoons old bay seasoning
      • 1/2 teaspoon kosher salt
      • 1/2 teaspoon freshly ground black pepper

      • 1/2 pound lump crabmeat, drained and picked to remove shells
      • 1/2 cup plain dry bread crumbs
      ingredients for aioli:
      • 1 cup mayonnaise
      • 1/2 cup lemon juice
      • 1 tablespoon dijon mustard
      • 1/4-1/3 cup minced garlic
      • 1 tablespoon lemon zest
      directions: place the 2 tablespoons butter, 2 tablespoons oil, onion, celery, red and yellow bell peppers, parsley, capers, hot pepper sauce, worcestershire sauce, crab boil seasoning, salt, and pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. cool to room temperature. in a large bowl, break the lump crabmeat into small pieces and toss with the bread crumbs, mayonnaise, mustard, and eggs. add the cooked mixture and mix well. cover and chill in the refrigerator for 30 minutes. shape into bite-sized crab cakes. heat the butter and olive oil for frying over medium heat in a large saute pan. add the crab cakes and fry for 4 to 5 minutes on each side, until browned. for the garlic aioli - mix all ingredients together and let chill for up to 4 hours. the longer it sits, the better the ingredients will mix, and the better it will taste.

      beef teriyaki kabobs

      ingredients:
      • 1 1/2 pounds sirloin steak, cut into 1/4-inch strips
      • 3/4 cup soy sauce
      • 1/2-inch slice fresh ginger
      • 1 clove garlic, minced
      • 1 1/2 teaspoons brown sugar
      • 1/2 cup water

      directions: combine soy sauce, ginger, garlic, sugar and water. marinate meat in the mixture in a plastic bag overnight in the refrigerator. soak skewers in water for 1 hour. preheat the grill to high heat. skewer meat on skewers. cook over hot coals until done to your liking. place pineapple slices on grill.


      honey-chipotle barbecue chicken sandwiches

      ingredients:
      • 1/2 cup water
      • 1 teaspoon ground cumin
      • 4 garlic cloves, thinly sliced
      • 1 pound skinless, boneless chicken breast
      • 1 (7-ounce) can chipotle chiles in adobo sauce
      • 1 tablespoon canola oil
      • 1 tablespoon minced garlic
      • 1 teaspoon ground cumin
      • 1/2 cup canned tomato puree
      • 1/4 cup cider vinegar
      • 3 tablespoons honey
      • 1 tablespoon worcestershire sauce
      • 1/4 teaspoon salt
      • 4 (1 1/2-ounce) sandwich rolls

      directions: combine water, 1 teaspoon cumin, 4 sliced garlic cloves, and chicken in a large saucepan. cover and bring to a boil over medium-high heat. reduce heat to medium-low; cook 10 minutes or until chicken is done. drain, and place chicken on a cutting board. cut chicken across grain into thin slices; keep warm.
      remove 2 tablespoons adobo sauce from can; set aside. remove 2 chipotle chiles from can; finely chop and set aside. heat oil in a large nonstick skillet over medium-high heat. add 1 tablespoon minced garlic; sauté 3 minutes or until just beginning to brown. add 1 teaspoon cumin; sauté 1 minute. stir in tomato puree; cook 4 minutes or until mixture thickens to a pastelike consistency, stirring constantly. stir in reserved 2 tablespoons adobo sauce, 2 chopped chipotle chiles, vinegar, honey, worcestershire, and 1/4 teaspoon salt. add sliced chicken to sauce; simmer for 3 minutes or until thoroughly heated. pack chicken up in airtight container. assemble at the beach and eat immediately!

      classic creamy coleslaw
      ingredients:
      • 1 tablespoon dijon mustard
      • 1 tablespoon cider vinegar
      • 1 tablespoon freshly squeezed lemon juice
      • 1 tablespoon sugar
      • 1 teaspoon coarse salt
      • 1/2 cup mayonnaise
      • 1/4 cup sour cream
      • 1 small green cabbage, (about 1 3/4 pounds), finely shredded
      • 2 medium carrots, cut into 1/8-inch-thick matchsticks or coarsely grated

      directions: whisk together mustard, vinegar, lemon juice, sugar, salt, mayonnaise, and sour cream in a small bowl. put cabbage and carrots in a large bowl. pour in dressing, and toss thoroughly. refrigerate, covered, until slaw begins to soften, 1 to 2 hours. if not using immediately, refrigerate, covered, up to 2 days. just before serving, toss coleslaw again.
